1 1/2 cups | 297g / 10oz | Sugar |
1/2 cup | 118ml | Vegetable oil |
2 | Eggs | |
1 teaspoon | 5ml | Vanilla |
1/4 cup | 59ml | Buttermilk - plus |
1 tablespoon | 15ml | Buttermilk |
1 teaspoon | 5ml | Baking soda |
1/2 teaspoon | 2.5ml | Salt |
1 3/4 cups | 109g / 3.8oz | Flour |
1 cup | 146g / 5.1oz | Walnuts - chopped |
In a medium bowl, mix bananas, sugar, oil, eggs and vanilla. Stir in buttermilk.
In a small bowl, stir soda, salt and flour together. Add to banana mixture. Stir in nuts.
Pour into a greased 9- by 5- by 3-inch loaf pan. Bake in a 325 degree oven for 1 hour and 20 minutes.
This recipe yields 1 loaf. Do not double recipe.
