Fruit Loaf Recipe - Cooking Index
A spicy raisin bread made in a bread machine. The most common substitute for mixed spice in the U.S.A. is pumpkin pie spice.

2 tablespoons | 30ml | Brown sugar - plus |

3 cups | 187g / 6.6oz | Bread flour - plus |
3 tablespoons | 45ml | Bread flour |
2 tablespoons | 30ml | Gluten flour |
2 tablespoons | 30ml | Milk powder - plus |
2 teaspoons | 10ml | Milk powder |
1 tablespoon | 15ml | Mixed spice |
2 teaspoons | 10ml | Active dry yeast |
3/4 cup | 120g / 4.2oz | Golden raisins |
2 tablespoons | 30ml | Mixed grated citrus peel - plus |
2 teaspoons | 10ml | Mixed grated citrus peel |
Add water, oil, brown sugar, bread flour, gluten flour, milk powder, mixed spice, and yeast into the bread machine pan in the order suggested by the machine's manufacturer. Select Fruit setting or the setting for Basic White Bread. Press Start.
If your machine has a Fruit setting, add the golden raisins and peel at the signal, or around 5 minutes before the kneading cycle has finished.
This recipe yields a 1 1/2 pound loaf.
