Greek Isle Bread

Unique is the word for this loaf. Don't let the combination of ingredients scare you off -- the texture created by the feta cheese combined with the smallest hint of cucumber makes this a wonderful bread. This is definitely a bread to accompany a hot meal. It's recommended with char-grilled marinated lamb chops or your favorite lamb kabobs.

2 cups 125g / 4.4ozWhite bread flour
3 tablespoons 45mlPlain yogurt
2 teaspoons 10mlDry milk
1 tablespoon 15mlSugar
1 teaspoon 5mlSalt
2 teaspoons 10mlButter
1   Garlic powder
4 teaspoons 20mlChopped black olives
1/2 teaspoon 2.5mlSweet basil
1/2 teaspoon 2.5mlDill weed
2 1/2 tablespoons 37mlFeta cheese
2 1/2 tablespoons 37mlPureed cucumber
1/2 teaspoon 2.5mlFast rise yeast
  (or 1 tspn active dry yeast)
  Large 1 1/2 To 2 Lb Loaf
3/4 cup 177mlWater
3 cups 187g / 6.6ozWhite bread flour
1/4 cup 59mlPlain yogurt
1 tablespoon 15mlDry milk
1 1/2 tablespoons 22mlSugar
1 1/2 teaspoons 7.5mlSalt
1 tablespoon 15mlButter
1/4 teaspoon 1.3mlGarlic powder
2 tablespoons 30mlChopped black olives
3/4 teaspoon 3.8mlSweet basil
3/4 teaspoon 3.8mlDill weed
1/4 cup 36g / 1.3ozFeta cheese
1/4 cup 59mlPureed cucumber
3/4 teaspoon 3.8mlFast rise yeast
  (or 1 1/2 tspns active dry yeast)

Recipe Instructions

Follow loading instructions per your owner's manual. This recipe can be used with the regular and rapid bake cycles.

Hints: Cucumber should be peeled, seeded, and then pureed. If the feta cheese is packed in water, drain well. Finely chop the black olives.

This recipe yields 1 loaf.
