Greek Bread

Now Robin Hood is pleased to bring you a wonderful recipe for Greek Bread -- so you can recreate that Southern European flavor right at home. This tasty recipe combines kalamata olives, crumbled feta cheese and fresh rosemary with our Robin Hood Best For Bread Homestyle white flour to create an aromatic loaf that has been known to draw crowds as it bakes in the oven. It's perfect with hearty pasta dishes or fresh salads. For tasty appetizers, simply spread thick slices with homemade bruschetta topping, or brush lightly with garlic flavoured olive oil and freshly ground pepper, then place under the broiler until lightly toasted.

Recipe Ingredients

  Dough
1 1/4 cups 296mlWater
3 tablespoons 45mlOlive oil
3 1/2 cups 829mlRobin Hood Best for Bread
  Homestyle white flour
3/4 teaspoon 3.8mlSalt
1 teaspoon 5mlGranulated sugar
1 tablespoon 15mlChopped fresh rosemary
2 1/4 teaspoons 11mlRobin Hood/SAF Perfect Rise Gourmet Yeast
  Filling
1/2 cup 73g / 2.6ozChopped pitted kalamata olives
1/4 cup 36g / 1.3ozCrumbled feta cheese
  Extra flour for dusting
2 tablespoons 30mlPurity Cornmeal - (optional)

Recipe Instructions

Dough: Add ingredients for dough to machine according to manufacturer's directions. Select dough cycle. Remove dough to lightly floured board; cover and let rest for 10 minutes.

Knead olives and cheese into dough, adding extra flour if dough becomes sticky, 2 to 3 minutes. Shape dough into ball. Place on sheet sprinkled with cornmeal or greased.

Cover with tea towel. Let rise in warm place (75 to 85 degrees) until doubled (30 to 45 minutes).

Bake at 400 degrees on lower oven rack for 25 to 30 minutes . Cover top of loaf with foil during last 15 minutes if becoming too brown. For a crisp crust, brush bread with water during last half of baking time.

Tips: For a beautiful presentation, sprinkle dough with chopped olives, feta and rosemary just before baking. Replace fresh rosemary with 1 teaspoon dried if desired. Replace kalamata olives with mixed deli-style olives.
