Apricot Spice Bread Recipe - Cooking Index

1/4 teaspoon | 1.3ml | Ground cinnamon |
1/2 teaspoon | 2.5ml | Ground anise seed |
1/2 teaspoon | 2.5ml | Ground allspice |
3/8 cup | 88ml | Apricot nectar - (to 1/2 cup) |
1 tablespoon | 15ml | Canola, safflower, or sunflower oil |
1 tablespoon | 15ml | Honey |
2 teaspoons | 10ml | Active dry yeast |
Large 1 1/2 Lb Loaf | ||
2/3 cup | 157ml | Dried apricots |
2/3 cup | 157ml | Water |
3 cups | 187g / 6.6oz | Bread flour |
1 1/2 tablespoons | 22ml | Dry milk |
1 1/2 teaspoons | 7.5ml | Sea salt |
1/2 teaspoon | 2.5ml | Ground cinnamon |
3/4 teaspoon | 3.8ml | Ground anise seed |
3/4 teaspoon | 3.8ml | Ground allspice |
1/2 cup | 118ml | Apricot nectar - (to 3/4 cup) |
2 tablespoons | 30ml | Canola, safflower, or sunflower oil |
2 tablespoons | 30ml | Honey |
1 packet | Active dry yeast |
Place the apricots and water in a small saucepan and bring to a boil. Remove from the heat and allow to steep for 5 minutes. Drain the apricots, reserving the liquid, and spread them out on a double thickness of paper towels. Allow the apricots and the liquid to cool to room temperature.
Place all ingredients in machine according to manufacturers directions -- EXCEPT APRICOTS. Measure the reserved cooking liquid and add enough apricot nectar to measure 5/8 cup for the 1-pound loaf and 7/8 cup for the 1 1/2-pound loaf. Select "whole wheat" bread setting; crust color medium. Chop the apricots. Add at "beep"
