Turkey Stock III

Recipe Ingredients

  Carcass of turkey
3   Water
1   Onion - coarsely chopped
1   Carrot - coarsely chopped
1   Celery stalk - coarsely chopped
6   Parsley sprigs
1/2 teaspoon 2.5mlDried thyme
1/4 teaspoon 1.3mlWhole peppercorns

Recipe Instructions

Break up the carcass so that it its into a 6-quart or larger pot. Add water and onion, carrot, and celery stalk. Bring to boil, skimming off any foam. Add parsley sprigs, thyme, and peppercorns.

Simmer 2 to 3 hours. Strain, then skim off any fat from surface of the broth.

This recipe yields 3 quarts.
