Turkey Stock III Recipe - Cooking Index
Carcass of turkey | ||
3 | Water | |
1 | Onion - coarsely chopped | |
1 | Carrot - coarsely chopped | |
1 | Celery stalk - coarsely chopped | |
6 | Parsley sprigs | |
1/2 teaspoon | 2.5ml | Dried thyme |
1/4 teaspoon | 1.3ml | Whole peppercorns |
Break up the carcass so that it its into a 6-quart or larger pot. Add water and onion, carrot, and celery stalk. Bring to boil, skimming off any foam. Add parsley sprigs, thyme, and peppercorns.
Simmer 2 to 3 hours. Strain, then skim off any fat from surface of the broth.
This recipe yields 3 quarts.
