Perfect Rice Recipe - Cooking Index
Fluffy texture (thanks to less-starchy converted rice) and the right balance of flavors (bay, thyme, and white pepper) earn this foolproof rice its name.
Type: Rice1 tablespoon | 15ml | Butter |
1/2 cup | 31g / 1.1oz | Finely-chopped onion |
1 cup | 40g / 1.4oz | Bay leaf (small) |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Dried thyme |
1 teaspoon | 5ml | Pinch freshly-ground white pepper (small) |
2 cups | 320g / 11oz | Converted white rice - (abt 13 oz) |
3 cups | 711ml | Low-salt chicken broth |
Melt butter in heavy large saucepan over medium heat. Add onion and bay leaf and saute until onion is translucent, about 3 minutes. Stir in salt, thyme, and white pepper. Add rice; stir 2 minutes to coat. Add broth and bring to boil. Reduce heat to low, cover, and simmer until rice is just tender and broth is absorbed, about 17 minutes. Discard bay leaf. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm in microwave before using.)
This recipe yields 10 servings.
