Watermelon, Green Onion, And Mint Salad Recipe - Cooking Index
5 cups | 1185ml | Cubed (3/4" to 1") seeded watermelon |
1 cup | 62g / 2.2oz | Chopped green onions |
3 tablespoons | 45ml | Chopped fresh mint |
3 tablespoons | 45ml | Chopped fresh Italian parsley |
1 1/2 tablespoons | 22ml | Finely-chopped seeded |
Deveined jalapeño chiles | ||
1/4 cup | 59ml | Olive oil |
2 tablespoons | 30ml | Champagne vinegar |
Combine watermelon, green onions, mint, parsley, and chiles in large bowl.
Whisk oil and vinegar in small bowl to blend. Pour dressing over watermelon mixture; toss to coat. Season salad generously with salt and pepper.
This recipe yields 6 servings.
