Aji Amarillo-Pineapple Salsa Recipe - Cooking Index
Aji amarillo is a Peruvian chile. This salsa uses a jarred paste made from these flavorful and fiery bright yellow peppers.
Courses: Sauces3 cups | 711ml | Cubed (1/4") peeled cored pineapple = (abt half of 1 large) |
1 cup | 146g / 5.1oz | Chopped yellow bell pepper |
1/2 cup | 31g / 1.1oz | Chopped green onions |
1/3 cup | 20g / 0.7oz | Finely-chopped red onion |
1/4 cup | 4g / 0.1oz | Chopped fresh cilantro |
2 tablespoons | 30ml | Chopped seeded red jalapeņo chiles |
4 teaspoons | 20ml | Hot pepper Aji Amarillo paste - - (from 7.5-oz jar) = (available at Latin American markets) |
Combine all ingredients in medium bowl. Season with salt and pepper. Let stand 2 hours, tossing occasionally. (Can be made 1 day ahead. Cover and refrigerate.)
