Peach And Cucumber Salsa

It's hard to believe that this sweet, crunchy, and smoky salsa has only six calories per serving.

Recipe Ingredients

2 cups 292g / 10ozDiced peeled pitted peaches - - (abt 1 1/2 lbs)
1 cup 146g / 5.1ozDiced unpeeled English hothouse cucumber
3/4 cup 109g / 3.8ozDiced red bell pepper
1/3 cup 5.3g / 0.2ozChopped fresh cilantro
2 tablespoons 30mlFresh lime juice
2 tablespoons 30mlApricot preserves
1 teaspoon 5mlChopped canned chipotle chiles - see * Note

Recipe Instructions

* Note: Chipotle chiles canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores, and some supermarkets.

Mix all ingredients in medium bowl. Season salsa to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover and refrigerate. Stir to blend before serving.)

This recipe yields about 3 cups.
