Spiced Peaches And Raspberries

This recipe is an accompaniment for "Peach Baked Alaskas with Spiced Peaches and Raspberries" (see recipe).

Recipe Ingredients

1 3/4 lbs 794g / 28ozPeaches - peeled, halved,
  Pitted - and sliced
1 tablespoon 15mlFresh lemon juice
1/4 cup 59mlPeach preserves - melted
1/4 cup 49g / 1.7ozSugar
1/2 teaspoon 2.5mlGround cardamom
2   Baskets fresh raspberries - (1/2 pint ea)

Recipe Instructions

Toss peaches with lemon juice in medium bowl. Add preserves, sugar, and cardamom and toss. Let stand 10 minutes to allow flavors to blend. (Can be made 4 hours ahead; cover and refrigerate.) Add raspberries and toss gently.

This recipe yields 8 servings.
