Ras El Hanout Recipe - Cooking Index
Literally "top of the shop," ras el hanout is a Moroccan spice blend that can contain more than 20 ingredients. This streamlined version includes the main spices of the traditional mixture.
Courses: Sauces2 teaspoons | 10ml | Ground nutmeg |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Ground ginger |
3/4 teaspoon | 3.8ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Ground mace |
1/2 teaspoon | 2.5ml | Ground allspice |
1/4 teaspoon | 1.3ml | Ground cinnamon |
1/4 teaspoon | 1.3ml | Crushed saffron threads |
Mix all ingredients in small bowl. (Can be made 1 week ahead. Store airtight at room temperature.)
This recipe yields about 2 1/2 tablespoons.
