Curried Smoked Turkey And Fruit Salad

This refreshing dish is perfect for a luncheon and is a snap to prepare. You can purchase thick slices of smoked turkey at your local delicatessen.

Recipe Ingredients

1 lb 454g / 16ozSmoked or cooked turkey - cut 3/4" cubes
3/4 lb 340g / 11ozGreen seedless grapes - stemmed
1 lb 454g / 16ozCantaloupe - peeled, cubed (large)
3 cups 330g / 11ozSliced celery - (abt 4 stalks)
6   Green onions - sliced
1/2 cup 80g / 2.8ozGolden raisins
1/2 cup 118mlMayonnaise
1/3 cup 78mlPlain yogurt
1/3 cup 78mlSour cream
1 tablespoon 15mlCurry powder
  Salt - to taste
  Freshly-ground black pepper - to taste
  Curly lettuce leaves - for serving
1 cup 93g / 3.3ozSliced almonds - toasted

Recipe Instructions

Combine turkey, grapes, cantaloupe, celery, green onions and raisins in large bowl. Whisk mayonnaise, yogurt, sour cream and curry powder together in small bowl. Pour mayonnaise mixture over salad and toss well. Season to taste with salt and pepper.

Line platter with lettuce leaves. Spoon salad atop lettuce. Sprinkle almonds over salad and serve.

This recipe yields 6 to 8 servings.
