Carrot And Apple Slaw Recipe - Cooking Index
2 tablespoons | 30ml | Lemon juice |
1 tablespoon | 15ml | Apple jelly |
4 tablespoons | 60ml | Carrots - peeled, grated (large) |
1 tablespoon | 15ml | Golden Delicious apple - peeled, grated (large) |
1/3 cup | 48g / 1.7oz | Chopped roasted cashews |
1/3 cup | 53g / 1.9oz | Raisins |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Whisk lemon juice and jelly in large bowl to blend. Add carrots, apple, cashews and raisins. Season to taste with salt and pepper. Toss thoroughly.
This recipe yields 4 servings.
