Broiled Figs With Oranges And Sherry Cream Recipe - Cooking Index
| 1 cup | 237ml | Chilled whipping cream |
| 3 tablespoons | 45ml | Golden brown sugar |
| 3 tablespoons | 45ml | Cream Sherry |
| 6 | Oranges - peeled, white pith | |
| Removed, sliced into rounds | ||
| Chopped fresh mint | ||
| 12 | Fresh figs - halved lengthwise | |
| Golden brown sugar - as needed | ||
| Cream Sherry - as needed |
Whip cream with 3 tablespoons brown sugar to soft peaks. Add 3 tablespoons Sherry and beat to firm peaks. Cover and chill. (Can be prepared 6 hours ahead.)
Preheat broiler. Arrange oranges in ring around center of each plate. Top with mint. Arrange figs cut-side up in broiler-proof pan. Sprinkle with brown sugar and Sherry. Broil until sugar begins to caramelize.
Mound cream in center of each plate. Top with figs and serve.
This recipe yields 6 servings.
