Broiled Figs With Oranges And Sherry Cream

Recipe Ingredients

1 cup 237mlChilled whipping cream
3 tablespoons 45mlGolden brown sugar
3 tablespoons 45mlCream Sherry
6   Oranges - peeled, white pith
  Removed, sliced into rounds
  Chopped fresh mint
12   Fresh figs - halved lengthwise
  Golden brown sugar - as needed
  Cream Sherry - as needed

Recipe Instructions

Whip cream with 3 tablespoons brown sugar to soft peaks. Add 3 tablespoons Sherry and beat to firm peaks. Cover and chill. (Can be prepared 6 hours ahead.)

Preheat broiler. Arrange oranges in ring around center of each plate. Top with mint. Arrange figs cut-side up in broiler-proof pan. Sprinkle with brown sugar and Sherry. Broil until sugar begins to caramelize.

Mound cream in center of each plate. Top with figs and serve.

This recipe yields 6 servings.
