Bacon And Blue Cheese Salad With Caesar Dressing

Recipe Ingredients

1   Romaine lettuce head - torn bite size (large)
6   Bacon slices - cooked, crumbled
1/2 cup 73g / 2.6ozCrumbled blue cheese - (abt 2 oz)
  Easy Caesar Dressing - (see below)
1 cup 30g / 1.1ozGarlic Croutons - (see below)
  Easy Caesar Dressing
1/2 cup 118mlFreshly-grated Parmesan - (abt 2 oz)
1/4 cup 59mlOlive oil - plus
2 tablespoons 30mlOlive oil
1/4 cup 59mlVegetable oil - plus
2 tablespoons 30mlVegetable oil
1/4 cup 59mlFresh lemon juice
2   Garlic cloves
1 teaspoon 5mlWorcestershire sauce
  Salt - to taste
  Freshly-ground black pepper - to taste
  Garlic Croutons
2 tablespoons 30mlButter - (1/4 stick)
1/4 cup 59mlOlive oil
2 cups 474mlGarlic cloves - pressed (large)
4   French bread slices - cut 3/4" cubes
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

To make the Salad: Place first 3 ingredients in large bowl. Add enough dressing to season to taste and toss well. Garnish salad with croutons and serve.

To make the Easy Caesar Dressing: Combine all ingredients in blender or processor. Blend until smooth. Season to taste with salt and pepper. (Can be prepared 2 days ahead. Cover and refrigerate. Makes about 1 cup.)

To make the Garlic Croutons: Preheat oven to 350 degrees. Melt 2 tablespoons butter with olive oil and garlic in small saucepan. Place bread cubes on baking sheet. Pour butter mixture over and toss well. Bake until bread cubes are golden brown and crisp, about 20 minutes. Season with salt and pepper. Cool completely.
