Spicy Garlic Soup Recipe - Cooking Index
1/4 cup | 49g / 1.7oz | Butter - (1/2 stick) |
1 cup | 237ml | Garlic head - cloves separated, (large) |
Peeled, and chopped | ||
3 tablespoons | 45ml | All-purpose flour |
3 cups | 711ml | Chicken stock |
= (or canned low-salt broth) | ||
Cayenne pepper | ||
Salt - to taste |
Melt butter in heavy large saucepan over medium-low heat. Add garlic and saute until golden, about 3 minutes. Add flour and stir until mixture is just golden, about 2 minutes. Add stock and bring to boil, stirring constantly.
Reduce heat and simmer 15 minutes. Season with cayenne and salt. (Can be prepared 1 day ahead. Cover and refrigerate. Reheat before serving.)
This recipe yields 2 servings.
