Bulgur Pilaf Recipe - Cooking Index

1 cup | 62g / 2.2oz | Chopped onion |
1 cup | 110g / 3.9oz | Coarsely shredded carrot |
1 cup | 237ml | Bulgur - (cracked wheat) |

10 tablespoons | 150ml | Bulgur - (cracked wheat) |

1/2 cup | 31g / 1.1oz | Currants |
1/2 teaspoon | 2.5ml | Salt |
2 cups | 474ml | Water |
2 tablespoons | 30ml | Pine nuts - toasted |
Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and carrot; sautee5 minutes or until tender. Add bulgur, currants, and salt; stir well. Add water; bring to a boil.
Cover, reduce heat and simmer 10 minutes or until bulgur is tender and liquid is absorbed. Yield: 5 servings (serving size: 1 cup).
