Bulgur Pilaf

  Vegetable cooking spray
1 cup 62g / 2.2ozChopped onion
1 cup 110g / 3.9ozCoarsely shredded carrot
1 cup 237mlBulgur - (cracked wheat)
  Uncooked
10 tablespoons 150mlBulgur - (cracked wheat)
  Uncooked
1/2 cup 31g / 1.1ozCurrants
1/2 teaspoon 2.5mlSalt
2 cups 474mlWater
2 tablespoons 30mlPine nuts - toasted

Recipe Instructions

Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and carrot; sautee5 minutes or until tender. Add bulgur, currants, and salt; stir well. Add water; bring to a boil.

Cover, reduce heat and simmer 10 minutes or until bulgur is tender and liquid is absorbed. Yield: 5 servings (serving size: 1 cup).
