Green-Olive Dressing Recipe - Cooking Index
Try this simple but flavorful dressing over tossed greens, too.
Courses: Salads, Sauces2/3 cup | 157ml | Extra-virgin olive oil |
1/4 cup | 15g / 0.5oz | Seeded chopped tomato |
1/4 cup | 36g / 1.3oz | Finely-chopped pitted brine-cured |
Green olives/ such as Sicilian | ||
2 teaspoons | 10ml | Grated lemon peel |
Salt - to taste | ||
Freshly-ground balck pepper - to taste |
Mix all ingredients in small bowl. Season to taste with salt and pepper. Let stand 2 hours at room temperature to blend flavors. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)
This recipe yields about 1 cup.
