Pecan Squares II Recipe - Cooking Index
"On our way to and from the Washington coast, we often stop at a small restaurant in Montesano called Savory Faire," says Thelma Laird of Fox Island, Washington. "They serve outstanding cinnamon rolls and imaginative sandwiches, but the recipe I'd most like to have is the one for pecan squares."
Courses: Dessert| 2 cups | 125g / 4.4oz | All-purpose flour |
| 1/2 cup | 99g / 3.5oz | Powdered sugar |
| 1 cup | 198g / 7oz | Unsalted butter - (2 sticks) - chilled, and |
| Cut into 16 pieces | ||
| 2 cups | 474ml | Pecan pieces - (abt 8 oz) |
| 3/4 cup | 120g / 4.2oz | Golden brown sugar - (packed) |
| 3/4 cup | 177ml | Honey |
| 6 tablespoons | 90ml | Whipping cream |
Preheat oven to 350 degrees. Butter 13- by 9- by 2-inch metal baking pan. Blend flour and powdered sugar in processor. Add butter and cut in, using on/off turns, until moist clumps form. Press dough onto bottom of prepared pan. Bake until golden, about 20 minutes. Maintain oven temperature.
Stir pecans, brown sugar, honey and cream in heavy small saucepan over medium heat until sugar dissolves. Boil until mixture bubbles, about 2 minutes.
Pour pecan mixture over crust. Bake until filling bubbles and is light caramel color, about 20 minutes. Cool completely. (Can be prepared 1 day ahead. Cover tightly and store at room temperature.) Cut into squares and serve.
This recipe yields about 20 squares.
