Pacific Pan Roasted Oysters Recipe - Cooking Index
This recipe came from one of our neighbors in Central Oregon. It is great with local Oregon oysters you can buy at any of the oyster farms along the Oregon Coast. We often make the trip just to pick up a variety of fresh seafood such as Dungeness crab, Pacific clams and fish.

3 | Eggs - slightly beaten | |
1/2 cup | 31g / 1.1oz | Flour |
1/2 cup | 73g / 2.6oz | Fine bread crumbs |
1/4 teaspoon | 1.3ml | Salt |
1/4 cup | 59ml | Vegetable oil |
4 teaspoons | 20ml | Water |
Freshly-ground black pepper - to taste | ||
Cocktail Sauce | ||
1/2 cup | 118ml | Catsup |
1 tablespoon | 15ml | Horseradish |
1 tablespoon | 15ml | Lemon juice |
1 tablespoon | 15ml | Worcestershire |
Heat oil in large cast-iron or heavy skillet over medium heat. Mix flour, salt and pepper. Mix eggs and water. Dip each oyster in flour then egg/water mixture, then bread crumbs before putting in skillet.
Cook approximately 3 minutes per side. Oysters should be medium-brown color. Turn only once. Serve hot with cocktail sauce.
