North Carolina Vinegar Sauce Recipe - Cooking Index
| 3 cups | 711ml | Cider vinegar |
| 4 1/2 tablespoons | 67ml | Ketchup |
| 3 tablespoons | 45ml | Brown sugar |
| 2 tablespoons | 30ml | Coarse salt |
| 1 1/2 tablespoons | 22ml | Tabasco sauce |
| = (or other hot sauce) | ||
| 1 1/2 teaspoons | 7.5ml | Hot red pepper flakes - (to 1 tbspn) - or more to taste |
| 1 1/2 teaspoons | 7.5ml | Freshly-ground black pepper - (to 1 tbspn) |
Combine ingredients in a nonreactive mixing bowl; whisk until salt and brown sugar dissolve. Taste for seasoning, adding hot pepper flakes as necessary.
Transfer sauce to clean (or even sterile) jars; refrigerate. It will keep for several months.
