Sweet Potato Home-Fries Recipe - Cooking Index
As the natural sugars in sweet potatoes and onions caramelize on the grill, the flavor of each vegetable improves, resulting in a dish that is greater than the sum of its parts. These home-fries are great as a side dish with steak, or even as an appetizer.

Wash the sweet potatoes and wrap them in heavy-duty aluminum foil. Place them on the grill at a medium-high heat for 30 to 40 minutes, depending on their size, turning them occasionally.
Remove them when they're still a bit firm when pierced with a sharp knife. Allow them to cool. Unwrap the potatoes and discard the foil. Peel the potatoes and cut them into 1/4-inch slices.
Place the sweet potatoes in a large nonstick skillet or a cast-iron skillet and add the onion, butter, nutmeg, salt and pepper. Place on high heat and cook, stirring frequently, until the potatoes are tender and slightly brown.
