Smoked Tuna Recipe - Cooking Index
Tuna is a good choice for smoking because it has a high fat content. It is especially tasty with an Oriental-style dipping sauce.

1/4 teaspoon | 1.3ml | Tabasco sauce |
1 teaspoon | 5ml | Dried parsley |
1 teaspoon | 5ml | Dried basil |
1 teaspoon | 5ml | Dried thyme |
2 | Caramelized Garlic - (see recipe) | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Juice of 1/2 lemon | ||
1 tablespoon | 15ml | Balsamic vinegar |
1 tablespoon | 15ml | Dry white wine |
1 cup | 237ml | Grilling Vinaigrette - (see above) |
1 tablespoon | 15ml | Chopped fresh ginger |
1 teaspoon | 5ml | Soy sauce |
1/2 teaspoon | 2.5ml | Sesame oil |
1 lb | 454g / 16oz | Tuna steak - 1" thk |
Dipping Sauce | ||
1/2 cup | 118ml | Hoisin sauce |
1/4 cup | 59ml | Catsup |
2 tablespoons | 30ml | Soy sauce |
Grilling Vinaigrette: Mix well and allowed to sit at room temperature to enhance its flavor.
Combine the Grilling Vinaigrette, ginger, soy sauce, and sesame oil in a non-reactive bowl. Add the tuna steak and marinate for 1 hour in the refrigerator, turning the tuna once or twice.
Smoke the tuna for 45 to 50 minutes. Chill to serve. Serve with dipping sauce.
Dipping Sauce: Combine ingredients in a small bowl and mix well.
