Cajun Sprinkle | ||
4 tablespoons | 60ml | Paprika |
2 tablespoons | 30ml | Granulated garlic |
1 tablespoon | 15ml | Onion powder |
1/2 teaspoon | 2.5ml | Cayenne pepper |
1 tablespoon | 15ml | Thyme |
1 teaspoon | 5ml | Oregano |
2 tablespoons | 30ml | Sea salt |
1 tablespoon | 15ml | Freshly-ground black pepper |
Mince garlic with salt, mix it with cayenne and paprika, then make into a paste with olive oil and lemon juice.
In a bowl, toss the shrimp in the spice mixture and marinate for at least one hour and up to three before using.
Preheat the grill to very high heat and place the shrimp individually or on skewers over the hot fire. Cook for 2 to 3 minutes per side or until the shrimp have lost their translucency. Remember -- do not overcook, as they will become tough.
For the Cajun Sprinkle: Mix and set aside. Just before the shrimp is finished cooking, sprinkle a light dusting of this spice blend over the shrimp. Don't use too much or it will overwhelm the flavor of the shrimp.
