Grilled Stuffed Tomatoes Recipe - Cooking Index
4 tablespoons | 60ml | Tomatoes (medium) |
1 teaspoon | 5ml | Olive oil |
1/4 cup | 36g / 1.3oz | Chopped black olives |
1 | Garlic clove - minced | |
1 cup | 146g / 5.1oz | Grated Romano cheese |
1 cup | 62g / 2.2oz | Onion - finely chopped (small) |
1 tablespoon | 15ml | Capers |
2 tablespoons | 30ml | Chopped fresh parsley |
1 teaspoon | 5ml | Lemon juice |
Salt - to taste | ||
Freshly-cracked black pepper - to taste | ||
1/4 cup | 36g / 1.3oz | Bread crumbs |
Scoop out the insides of the tomatoes into a medium sized bowl, then add olive oil, olives, garlic, onion, lemon juice, salt and pepper. Toss in a skillet and saute until onion is translucent.
Remove mixture from heat and stir in capers, parsley and 3/4 cup of the cheese. Scoop equal amounts of the mixture into the hulled out tomatoes and pack firmly.
Mix the breadcrumbs and the remaining cheese and coat the tops of the tomatoes.
Place tomatoes on the grill over medium heat and close lid. Grill for 10 to 20 minutes, checking often. Do not overcook, because the tomatoes will crack open and turn mushy.
This recipe yields 4 servings.
