Grilled Salsa Recipe - Cooking Index
Grilling the vegetables first gives this salsa a unique smoky flavor.

Puree from 2 cloves Caramelized Garlic - (see recipe) | ||
Juice and zest of 1 lime | ||
1/4 cup | 4g / 0.1oz | Chopped fresh cilantro |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Tabasco sauce - to taste |
Grill the tomatoes, scallions, green bell pepper and jalepeño peppers at a medium high heat for 3 to 4 minutes and remove from the grill.
Remove the seeds from the peppers and chop the vegetables. In a medium bowl combine the vegetables with the garlic, lime juice and zest, cilantro, salt, pepper, and Tabasco. Stir well and set aside for 1 hour before serving to allow the flavors to meld.
This recipe yields 2 cups.
