Grilled Eggplant With Thyme Butter Recipe - Cooking Index
Eggplants are great grilled over an open fire. Here is a simple recipe for a side dish that will go with any red meat. If you have a side burner on your grill, you can make the sauce while the eggplant is cooking.

Slice the eggplant lengthwise (top to bottom) about 3/4" thick. You can leave the skin on. Brush with some of the melted butter and grill approximately 2 minutes per side over a hot fire.
In a saute pan, heat the rest of the butter and cook until it begins to turn brown and foam. Remove from the heat and add the fresh thyme. Add a pinch of salt and a pinch of pepper.
Arrange the eggplant on a plate, and spoon some of the hot butter over it. Serve with any red meat.
