BBQ Ham And French Brie Quesadillas Recipe - Cooking Index
Try this French variation on the classic Mexican quesadilla. It's best if you can get some true French Bayonne ham, Smithfield style ham, or even prosciutto, but it still tastes great with your garden variety smoked ham from the grocery store.

1 | Wedge Brie cheese - (8 oz) - thinly sliced | |
4 | Burrito-size flour tortillas - (to 6) (large) | |
1 teaspoon | 5ml | BBQ sauce |
Take the ham steak and brown it on your grill until the edges begin to blacken. Brush it very lightly with some BBQ sauce, and continue to cook it for another couple of minutes.
Be careful to not burn the sauce -- the idea is to slightly grill, then glaze the ham. Remove the steak from the heat and after it has cooled, coarsely chop it.
When you are ready to make the quesadillas, cover the bottom tortilla with some of the chopped ham and some thin slices of Brie. Top with another flour tortilla and place the quesadillas on the grill.
Cook on one side until the cheese begins to melt, and the tortilla begins to get crisp. Do the other side the same way. When both sides are nicely browned and slightly crisp, cut into pie-shaped pieces and serve.
