Sugar And Spice Recipe - Cooking Index
Sweet and fragrant, this rub flavors some of our favorite grilled pork dishes. Turbinado sugar -- a crystallized, lighter version of brown sugar -- contributes a coarse texture to the mix that enhances its crusting effect.
3 tablespoons | 45ml | Ground allspice |
2 tablespoons | 30ml | Turbinado sugar |
= (or 1 tbspn regular sugar) | ||
1 1/2 tablespoons | 22ml | Kosher salt |
= (or other coarse salt) | ||
1 tablespoon | 15ml | Ground dried mild red chile |
= (such as New Mexican) | ||
1 tablespoon | 15ml | Ground cinnamon |
1 tablespoon | 15ml | Freshly-ground black pepper |
1 1/2 teaspoons | 7.5ml | Freshly-ground white pepper |
Mix the spices in a small bowl. Store the rub covered in a cool, dark pantry or freezer.
This recipe yields 3/4 cup.
