Sweet and fragrant, this rub flavors some of our favorite grilled pork dishes. Turbinado sugar -- a crystallized, lighter version of brown sugar -- contributes a coarse texture to the mix that enhances its crusting effect.


Recipe Ingredients

3 tablespoons 45mlGround allspice
2 tablespoons 30mlTurbinado sugar
  = (or 1 tbspn regular sugar)
1 1/2 tablespoons 22mlKosher salt
  = (or other coarse salt)
1 tablespoon 15mlGround dried mild red chile
  = (such as New Mexican)
1 tablespoon 15mlGround cinnamon
1 tablespoon 15mlFreshly-ground black pepper
1 1/2 teaspoons 7.5mlFreshly-ground white pepper

Recipe Instructions

Mix the spices in a small bowl. Store the rub covered in a cool, dark pantry or freezer.

This recipe yields 3/4 cup.
