Grilled Peppers And Shrimp Recipe - Cooking Index
8 | Extra-large uncooked shrimp - (to 10) - peeled, deveined | |
2 tablespoons | 30ml | Olive oil |
1 | Garlic clove - minced | |
1 | Shallot - minced (medium) | |
1/2 teaspoon | 2.5ml | Basil |
1/2 teaspoon | 2.5ml | Red bell pepper - seeded, and (large) |
Cut into 1" squares | ||
1/2 | Yellow bell pepper - seeded, and (large) | |
Cut into 1" squares | ||
1/2 | Yellow squash - cut 1/4"-thk rounds, (large) | |
Then halved |
Place the shrimp in a bowl with the olive oil, garlic, shallot and basil. Toss to coat throughly. Set aside and let stand for about 1 hour.
Preheat the grill you will cook on. Set the pepper pieces onto the grill, then place the shrimp onto the grill. Turn both after about 1 minute. Re-turn as needed to grill thoroughly.
Place the shrimp in a fan in the center of a large serving dish, and surround with the peppers. Serve immediately.
