Grilled Peppers And Shrimp

Recipe Ingredients

8   Extra-large uncooked shrimp - (to 10) - peeled, deveined
2 tablespoons 30mlOlive oil
1   Garlic clove - minced
1   Shallot - minced (medium)
1/2 teaspoon 2.5mlBasil
1/2 teaspoon 2.5mlRed bell pepper - seeded, and (large)
  Cut into 1" squares
1/2   Yellow bell pepper - seeded, and (large)
  Cut into 1" squares
1/2   Yellow squash - cut 1/4"-thk rounds, (large)
  Then halved

Recipe Instructions

Place the shrimp in a bowl with the olive oil, garlic, shallot and basil. Toss to coat throughly. Set aside and let stand for about 1 hour.

Preheat the grill you will cook on. Set the pepper pieces onto the grill, then place the shrimp onto the grill. Turn both after about 1 minute. Re-turn as needed to grill thoroughly.

Place the shrimp in a fan in the center of a large serving dish, and surround with the peppers. Serve immediately.

This recipe yields 2 servings.
