Grilled Eggplant Italiano Recipe - Cooking Index
1 tablespoon | 15ml | Eggplant - cut round slices (large) |
Abt 1/2" thick | ||
Olive oil - as needed | ||
2 | Garlic cloves - minced | |
1 teaspoon | 5ml | Oregano |
1 teaspoon | 5ml | Onion powder |
1/2 teaspoon | 2.5ml | Basil |
Rub each round with the olive oil, then sprinkle on both sides with the herbs. Place on the griddle and cook until just soft.
This recipe yields about 4 servings.
