Wild Rice Pilaf À La Weber Recipe - Cooking Index
White wine, yellow pepper, and plum tomatoes add elegance to an indispensable side dish.

1/4 cup | 59ml | Dry white wine |
1/2 cup | 80g / 2.8oz | Regular brown rice |
1/2 cup | 80g / 2.8oz | Wild rice |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 cup | 73g / 2.6oz | Yellow pepper - chopped (medium) |
2 | Ripe plum tomatoes - chopped | |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Ground cumin - (optional) |
In saucepan over medium-high heat cook mushrooms in butter for 5 minutes, stirring occasionally.
In an 8- by 12-inch foil pan combine cooked mushrooms, water, wine, brown rice, wild rice, onion, yellow pepper, tomatoes, salt, and pepper; add cumin, if desired. Cover with foil; seal tightly.
Place pan in center of cooking grate. Grill 1 hour or until rice is tender, stirring once halfway through cooking time (reseal tightly after stirring).
This recipe yields 4 servings.
