Herbed Pecan Rub Recipe - Cooking Index
1/2 cup | 118ml | Pecans - broken |
3 | Garlic cloves - cut up | |
1/2 cup | 118ml | Fresh oregano |
1/2 cup | 118ml | Fresh thyme |
1/2 teaspoon | 2.5ml | Finely-shredded lemon peel |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Salt |
1/4 cup | 59ml | Cooking oil |
In a blender or food processor, combine all ingredients except the oil. Cover and blend several times, scaping sides, until a paste forms.
With machine running, gradually add oil until mixture forms a paste. Rub onto fish or chicken.
This recipe yields about 1/2 cup, enough for 3 pounds of meat.
