Herbed Pecan Rub

Recipe Ingredients

1/2 cup	118ml	Pecans - broken
3		Garlic cloves - cut up
1/2 cup	118ml	Fresh oregano
1/2 cup	118ml	Fresh thyme
1/2 teaspoon	2.5ml	Finely-shredded lemon peel
1/2 teaspoon	2.5ml	Freshly-ground black pepper
1/4 teaspoon	1.3ml	Salt
1/4 cup	59ml	Cooking oil

Recipe Instructions

In a blender or food processor, combine all ingredients except the oil. Cover and blend several times, scaping sides, until a paste forms.

With machine running, gradually add oil until mixture forms a paste. Rub onto fish or chicken.

This recipe yields about 1/2 cup, enough for 3 pounds of meat.
