Shrimp With Tomato And Feta Recipe - Cooking Index
1/2 cup | 31g / 1.1oz | Chopped onion |
2 tablespoons | 30ml | Olive oil |
1 | Italian-style plum tomatoes - (28 oz) - drained, cut up | |
1/3 cup | 78ml | Dry white wine |
2 teaspoons | 10ml | Dried oregano leaves |
3/4 lb | 340g / 11oz | Medium shrimp - cleaned |
1 | Athenos Traditional Crumbled Feta Cheese - (4 oz) | |
2 tablespoons | 30ml | Chopped fresh parsley |
Cook and stir onion in oil in large skillet on medium heat 3 minutes. Add tomatoes, wine and oregano. Reduce heat to low; simmer 5 minutes or until thickened.
Add shrimp. Cook 3 minutes, stirring frequently, until shrimp are pink. Sprinkle with feta cheese; simmer 1 minute. Stir in parsley.
Serve with hot cooked rice and garnish with fresh herbs, if desired.
This recipe yields 4 servings.
