Party Meatballs With Yogurt And Feta Sauce

Recipe Ingredients

1 lb 454g / 16ozGround beef
1/2 cup 20g / 0.7ozChopped fresh flat-leaf parsley
1   Egg
1/4 cup 36g / 1.3ozDry bread crumbs
2   Garlic cloves - minced
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
1 tablespoon 15mlOlive oil
  Yogurt and Feta Sauce
1   Athenos Traditional Crumbled Feta Cheese - (4 oz)
3/4 cup 177mlPlain yogurt
2 tablespoons 30mlMilk
1   Garlic clove - minced
1/3 cup 20g / 0.7ozChopped seeded tomato
1/3 cup 48g / 1.7ozChopped seeded peeled cucumber
1 teaspoon 5mlFinely-chopped fresh dill

Recipe Instructions

Mix meat, parsley, egg, crumbs, garlic, salt and pepper. Shape into 1-inch meatballs.

Heat oil in medium skillet. Add meatballs. Cook on medium-low heat 12 to 15 minutes or until cooked through, stirring occasionally. Serve with Yogurt And Feta Sauce.

Yogurt And Feta Sauce: Place feta cheese, yogurt, milk and garlic in food processor container fitted with steel blade or in blender container; cover. Blend until smooth. Stir in tomato, cucumber and dill. (Makes 2 cups)

This recipe yields 20 meatballs.

Variation: Try ground lamb in place of half or all of the ground beef.
