Chicken And Hummus Panini

Recipe Ingredients

8   Crusty Italian bread
1   Athenos Original Hummus - (7 oz)
2   Boneless skinless chicken breast halves - grilled or
  Broiled, cut into 1/4" slices
  Tomato slices - as needed
  Fresh basil leaves - as needed
1   Athenos Feta Cheese with
  Basil & Tomato - (8 oz) - thinly sliced
  Red onion slices - as needed
  Olive oil - as needed

Recipe Instructions

Spread 1 side of each bread slice with hummus. Top with chicken slices, tomato, basil leaves, feta cheese, onion and second bread slice.

Brush outsides of sandwiches with oil. Cook sandwiches in skillet on medium heat until lightly browned on both sides.

This recipe yields 4 sandwiches.

Great Substitutes: Try 1 package (6-oz) Louis Rich Carving Board Grilled Chicken Breast Strips in place of chicken.
