Italian Salad Dressing Mix | ||
1/4 cup | 59ml | Vinegar |
3 tablespoons | 45ml | Oil |
1 1/2 lbs | 681g / 24oz | Red potatoes - cut into chunks |
1 lb | 454g / 16oz | Red or green pepper - cut into 1" pieces (medium) |
1 lb | 454g / 16oz | Onion - cut into 1" pieces (medium) |
Prepare salad dressing mix as directed on envelope with vinegar and oil, omitting water. Toss remaining ingredients with dressing mixture. Spoon evenly onto double layer of heavy-duty aluminum foil; close foil to form tightly-sealed pouch.
Place on grill over medium coals. Grill 30 to 35 minutes or until tender, turning halfway through grilling time to prevent burning.
This recipe yields 6 (3/4-cup) servings.
To Bake: Prepare as directed except for grilling. Spoon evenly into 15- by 10- by 1-inch baking pan lined with foil. Bake at 400 degrees for 40 minutes or until tender.
