2 | Black beans - (15 oz ea) - undrained, divided | |
3 cups | 711ml | Water |
1/2 cup | 31g / 1.1oz | Chopped onion |

Garlic & Herb Salad Dressing Mix | ||
1 1/2 cups | 240g / 8.5oz | Minute Instant Brown Rice - uncooked |
Breakstone's or Knudsen Light Sour Cream | ||
Cilantro leaves | ||
Chopped red pepper |
Place 1 1/2 cans of the beans with liquid in blender container; cover. Blend until smooth. Pour into large saucepan. Stir in remaining beans, water, onion and salad dressing mix.
Bring to boil. Stir in rice. Reduce heat to low; cover and simmer 5 minutes.
Spoon into individual serving bowls; top with remaining ingredients.
This recipe yields 7 (1-cup) servings.
