Tomato And Orange Feta Salad Recipe - Cooking Index
4 cups | 250g / 8.8oz | Tomatoes - sliced 1/4" thick (large) |
4 | Oranges - peeled, and | |
Sliced 1/4" thick | ||
1 | Athenos Traditional Feta Cheese - (8 oz) - sliced 1/8" thick | |
2/3 cup | 26g / 0.9oz | Small basil leaves - (lightly packed) |
= (or 8 large basil leaves, julienne-cut) | ||
1/4 cup | 59ml | Olive oil |
1 tablespoon | 15ml | Balsamic vinegar |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Arrange tomatoes, oranges and feta cheese alternately in overlapping circles on serving platter. Sprinkle with basil.
Mix remaining ingredients; spoon over salad.
This recipe yields 8 servings.
Make-Ahead Directions: Prepare salad as directed except for preparing dressing; cover. Refrigerate until serving. Pour dressing over salad at serving time.
