Mango Chicken Summer Salad Recipe - Cooking Index
1 | Container Breyer's Fat Free Lemon Yogurt - | |
3 tablespoons | 45ml | Kraft Mayo Real Mayonnaise |
2 tablespoons | 30ml | Milk |
1 | Louis Rich Grilled Chicken Breast Strips - (6 oz) | |
1 | Mango - peeled, diced | |
1 | Avocado - peeled, diced | |
Leaf lettuce - as needed |
Mix yogurt, mayonnaise and milk until well blended. Toss chicken breast strips, mango and avocado with 1/2 cup of the yogurt mixture. Serve on bed of lettuce with remaining yogurt mixture.
This recipe yields 4 servings.
Variation - Mango Chicken Salad Wrap: Prepare chicken salad as directed; spoon evenly onto lettuce leaves. Roll up.
How to ripen mango and/or avocado: Store at room temperature until ripened.
