1/2 cup | 118ml | Pitted ripe olives - sliced |
= (or pitted kalamata olives, sliced) | ||
8 | Flour tortillas - (8" or 10" dia) |
Mix cheeses and olives. Spread 4 tortillas evenly with cheese mixture, leaving 1/2-inch border around edge. Top each with 4 remaining tortillas.
Place on grill over low coals. Grill 2 minutes on each side or until crisp and golden. Cut each quesadilla into 8 wedges.
This recipe yields 32 pieces.
Great Substitute: Substitute 1/2 cup chopped roasted red peppers for olives.
Use Your Electric Griddle: Assemble quesadillas as directed. Grill on 350 degree electric griddle 2 minutes on each side or until crisp and golden.
