Black Bean And Mango Salsa Recipe - Cooking Index
1 | Black beans - (16 oz) - rinsed, drained | |
1 | Frozen whole kernel corn - (10 oz) - thawed | |
1 cup | 146g / 5.1oz | Chopped ripe mango |
1/2 cup | 73g / 2.6oz | Chopped red pepper |
1/3 cup | 5.3g / 0.2oz | Chopped cilantro |
1/3 cup | 20g / 0.7oz | Chopped red onion |
1/4 cup | 59ml | Lime juice |
1 | Good Seasons Italian Salad Dressing Mix |
Mix all ingredients in large bowl. Refrigerate several hours or until chilled.
Serve with tortilla chips or grilled chicken.
This recipe yields about 5 cups.
Special Extra: Add 1 1/2 cups cooked Minute Brown Rice to bean mixture before refrigerating.
