Thai-Style Chicken Recipe - Cooking Index
So many of the great tastes of Thailand are found in the great outdoors, at roadside food stands. I've discovered that this tasty chicken recipe with all the right seasonings works equally well indoors.

Marinade | ||
3 tablespoons | 45ml | Fish sauce - see * Note |
3 tablespoons | 45ml | Finely chopped cilantro |
2 tablespoons | 30ml | Minced garlic |
1 tablespoon | 15ml | Grated fresh ginger |
2 teaspoons | 10ml | Sugar |
2 teaspoons | 10ml | Curry powder |
1 teaspoon | 5ml | Turmeric powder |
1/2 teaspoon | 2.5ml | Freshly-ground white pepper |
* Note: Fish sauce and sweet chili sauce are available at Asian food stores.
Combine marinade ingredients in a large bowl. Add chicken and turn to coat. Cover and refrigerate for 4 hours or up to overnight.
Preheat oven to 375 degrees. Place chicken pieces 1 inch apart in a shallow baking pan. Bake, uncovered, until meat near bone is no longer pink when cut, 40 to 45 minutes.
Place chicken on a serving plate. Pass a small bowl of sweet chili sauce for dipping.
