1 cup | 237ml | Juice of sour apples |
1 teaspoon | 5ml | Dried oregano - or more to taste |
1 teaspoon | 5ml | Salt |
1 | Freshly-ground black pepper | |

2 | Or more Garlic cloves - slivered |

Blend juniper powder into brown sugar and dissolve in apple juice. Sprinkle loin with oregano, salt, pepper, and MSG. Gash the top of the loin on the fat side 1/2 inch deep and insert garlic slivers. Put meat on roaster rack. Roast uncovered, at 350 degrees, basting freely every 15 minutes with apple juice, for 35 minutes per pound. Remove meat from pan, spoon out all fat, and make pan gravy.
This recipe yields 10 to 15 servings.
