Spiced Bear

Recipe Ingredients

3 lbs 1362g / 48ozFat-free bear roast - (to 4 lbs) - marinated
  (perhaps in Cooked Marinade) - see * Note
2 tablespoons 30mlHoney
1 teaspoon 5mlGround cinnamon
1 teaspoon 5mlGarlic juice
1 teaspoon 5mlGround ginger
2 cups 474mlStrained marinade
1/4 lb 113g / 4ozButter

Recipe Instructions

* Note: See the "Cooked Marinade" recipe which is included in this collection.

Wipe the meat dry and rub with mixture of honey, cinnamon, garlic juice, and ginger. Put in a roaster on a rack and dot with butter and baste with marinade every 30 minutes. Roast at 325 degrees for 3 hours. If in a self-basting roaster, uncover for the last 30 minutes.

This recipe yields 8 to 10 servings.
