1   Partridge per person
  Salt pork, bacon or butter
  Sweet butter - seasoned with
  Lemon juice
  Anchovy Butter - see * Note

Recipe Instructions

Lard birds well or wrap in salt pork or bacon, or baste with butter. Roast covered at 350 degrees for 30 to 40 minutes. Slash breast before serving and fill with sweet butter spiced with lemon juice, or use Anchovy Butter.
