8 lbs | 3632g / 128oz | Beaver - (to 10 lbs) - fat removed, |
And cut into parts | ||
1 | Bay leaf | |
2 | Onions - chopped (medium) | |
1 | Or 2 Garlic cloves - minced | |
1/2 cup | 55g / 1.9oz | Chopped celery tops |
Flour - as needed | ||
Suet - as needed | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Soak the meat in salted water overnight. Parboil in the same water with bay leaf, onions, garlic, and celery leaves until half done. Drain and roll in flour, then brown in rendered suet. Season with a dusting of salt and pepper. Bake in a covered pan at 350 degrees until tender.
This recipe yields 12 servings.
