Kodiak Steaks

Recipe Ingredients

  One-inch steaks or chops - cut serving pieces,
  Marinated, perhaps in
  Wine-Vinegar Marinade - see * Note
1/2 cup 31g / 1.1ozFlour
1/2 teaspoon 2.5mlGround allspice
1/2 teaspoon 2.5mlFreshly-ground black pepper
1 teaspoon 5mlGround ginger
1 teaspoon 5mlOnion salt
3 tablespoons 45mlSweet butter
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

* Note: See the "Wine-Vinegar Marinade" recipe which is included in this collection.

Marinate young steaks overnight, older ones longer. Mix flour with allspice, pepper, ground ginger, and onion salt. Pound flour mixture into meat. Brown in sweet butter over moderately hot heat. Season steaks with salt and pepper after browning. Cover and simmer until well done.
