Fat ham - for larding | ||

1 | Onion - sliced | |
1 | Carrot - chopped | |
1 | Celery rib - chopped | |
1 | Parsley sprig - chopped (large) | |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 cup | 237ml | White wine |
1 cup | 237ml | Stock |
Lard a leg of boar with strips of fat ham. Brown in butter with onion, carrot, celery rib, parsley sprig, and salt and pepper. When browned, pour on white wine and cook for 2 minutes. Add stock. Cover and simmer very gently for 3 hours.
